Snapper with Yuzu and Horopito

Whether you've been out fishing yourself, been given some by family or friends, or purchased some from a Pan fried snapper seasoned with yuzu and horopito

market - here is a simple little recipe toadd a delicious twist this most popular New Zealand fish - Snapper.

 

Ingredients:

Fresh Snapper (quantity to suit number of people) Yuzu Powder or Flakes
Flour Dried Horopito
Cornstarch (or Cornflour) Spring Onion
Cooking oil  

 

Chop the spring onion into small pieces, and have ready together with the Yuzu and Horopito to add at the end.

In a bowl, or on a plate - mix approximately 80% flour and 20% cornstarch together - total amount to suit your number of pieces of snapper.

Place each piece of fish into the flour and cornstarch mixture, flipping over to get both sides covered.

Add some cooking oil to a frying pan - and bring to a high heat.

Once hot - add 1 - 2 pieces of snapper at a time to the pan and cook until golden brown underneath. Then flip over and cook the other side until also golden brown. Remove and either place on a warm plate under foil while you cook the other pieces - or once done place onto your serving plates.

Sprinkle over top of the cooked fish the dried Yuzu and Horopito - amount to taste. Then finish by adding some chopped spring onion over top.

Serve with a salad or steamed vegetables as you prefer.
